Tasty Summer Recipes

Try any of these fresh, delicious and nourishing summer recipes, you will be amazed of how simple and delicious they are.

Eat more salads and light foods in summer as they are cooling and best eaten for lunch.

Saute Rapini


2 bunches of fresh rapini, chopped

1 cup of cooked chickpeas (if using canned, drain and rinse before using)

1 medium chopped onion

1 teaspoon garlic minced or fresh ginger

1-2 tbsp of extra virgin olive oil

Salt and pepper

1. In a saucepan, saute garlic and onion in olive oil until translucent.

2. Add the chopped rapini and saute.

3. Add salt and pepper to taste.

3. Cover and simmer until tender.

4. Add the chickpeas and stir for two minutes.

Serve as a side or meal. Use lemon to garnish.

Green Peas Soup


3-4 Cups of fresh peas with shell

2 Celery stall chopped

2 Green onion stall chopped

1/3 cup of fresh unsalted cashews

4 cups of chicken or vegetable stock

1 cup of water

Salt, pepper to your taste

2 Tbsp of evoo

Mint leaves, sumac to garnish

1.In a pot Sauté celery and green onion for 3-5 minutes,

2.add stock, water and peas.

3.Add cashews.

4.Simmer for 30 minutes or until peas are tender.

5.Puree in blender.

6. Serve and drizzle evoo,

7.Add lemon and sumac.

Enjoy at room temperature or warm.

Cauliflower, Chickpeas & Green Peas Stir Fry


1 bag of cauliflower rice

2 cups cooked or frozen of Green peas

1 cup of cooked chickpeas

1/4 each of yellow and orange peppers tinny cut

1 bunch of dandelion chopped

11/2 TBS of butter or coconut butter

1/2 tsp of Lemon herbs spice

1/2 tsp Ginger powder

1 tsp of fennel seeds

Salt & Pepper to taste

  1. In a pan melt the butter,

  2. Add fennel seeds and the rest of spices, stir for a few minutes

  3. Add Cauliflower rice, Green Peas, Chickpeas and peppers

  4. last add the dandelion

  5. Sauté until al dente

  6. Add salt and pepper
